Japanese Sous Chef or CDP (Expat)

RESPONSIBILITIES

  • Assist with running all aspects of daily restaurant operations including but not limited to; managing staff schedules and station assignments, ordering, and receiving products, preparing prep lists and instruction for the team, quality checking products during all stages of preparation, general oversight of production and service, conducting regular internal health and safety inspections, managing daily food cost and spend
  • Assist the Japanese Executive Chef in the design and implement menus that fit the requirements of sushi, sashimi,… as set out by the Executive Chef.
  • Provide training materials to front-of-house and back-of-house staff for relevant jobs as it pertains to menu knowledge and cooking procedures
  • Set and maintain a very high standard of food quality in preparation and execution
  • Ensure food is handled in a respectful manner and is processed and stored in accordance with local hygiene regulations
  • Adhere to and enforce company policies and statutory requirements with regard to health and safety, sanitation, fire procedures, and HACCP
  • Ensure safe and proper use of equipment
  • Ensure kitchen equipment is in good working order and address any equipment issues promptly
  • Maintain a high standard of cleanliness and sanitation in and around all culinary work areas
  • Teach, develop, and support the culinary team as needed
  • Work with Japanese Executive Chef and front-of-house staff to ensure a positive guest experience
  • Maintain food cost, labor cost, supply cost, and other controllable expenses within budget guidelines
  • Minimize waste and spoilage by monitoring occupancy forecasts
  • Conduct daily pre-shift meetings with staff
  • Temporary or permanent duties and responsibilities may be added to or modified as deemed necessary

REQUIREMENTS

  • Culinary degree in a related field; or equivalent combination of education and experience preferred but not required
  • Four (2) or more years of prior relevant experience in a luxury property recommended
  • Previous leadership experience in the culinary field required

Korean Director of Sales (Expat)

RESPONSIBILITIES

  • Take full accountability in pricing grids and budget setting of the Hotel providing rationale statistics analysis supported by the revenue manager throughout the operating year
  • Identify business trends and marketing opportunities that can improve the hotel’s performance.
  • Continuously solicit for new business that expands client base using action plans focused on the market segment and set forth proposals to the Director of Sales & Marketing monthly and quarterly.
  • Prospecting and growing an account list, handling incoming leads and closing sales that covers all segments of the Hotel
  • Monitor opportunities for community involvement and strive to maintain high profile of Hotel within the hospitality sector
  • Practice professional account qualification on a consistent basis (i.e., measure budget needs, date flexibility, space requirement, competitive information etc).
  • Work closely with each salesperson and identify opportunities and ways to maximize and exceed personal and team revenue goals.

REQUIREMENTS

  • At least 3 years of experience in same position
  • Strong and very positive inter-personal and leadership skills
  • Track record of team work excellence and leadership and development of junior staff
  • Highly organized, a departmental trainer and enjoy developing his/her team
  • Hotel sales & marketing experience is essential
  • Current experience and contacts within corporate markets are required
  • A proven track record of successful account management and business development essential
  • A self-motivated, proactive and can-do proactive attitude is required.

  • This role is for a hungry go getter not an account manager
  • Candidates must demonstrate excellent communication and presentation skills.
